Spicy Peanut NoodleHubby had this Spicy Peanut Noodle at a Thai restaurant and loved it. We found a similar recipe in an old Vegetarian magazine that had cucumbers - which he cannot eat. So we came up with the following. Enjoy!
8 oz linguine
1/3 cup creamy or crunchy peanut butter
¼ cup water
2 Tbsp soy sauce
1.5 Tbsp rice wine vinegar
1-2 tsp. Chile paste
1-2 cloves chopped garlic
1 medium size red bell pepper, cut into thin strips
3 green onions, sliced, about ¼ cup
2 Tbsp chopped cilantro
2 cups broccoli, cut up
2 carrots, sliced thin
Optional: 4 lime wedges
Optional: ¾ c chopped cucumber
Cook linguine per package directions
Sauté green onions, garlic and red peppers, 2-3 mins.
Combine peanut butter, water, soy sauce, vinegar, Chile paste in large bowl, whisk until blended. If sauce is too thick, thin with a little water, it should have consistency of cream. Add green onions, garlic, red pepper, toss well.
Meanwhile steam broccoli and carrots or stir fry with green onions & red peppers until just tender.
Combine linguine and sauce, stir well. Add cilantro and vegetables. Serve with lime wedges if desired.
We added lots more spicy seasoning!
Add for dessert . . .
And finished our meal off with chocolate covered strawberries and chocolate covered candied ginger root! Perfect!
