Broccoli Cheese Soup



Broccoli Cheese Soup


It's been many years since making Broccoli Cheese Soup and finally I stumbled upon a recipe (I don't remember where I found it) and it was sensational! SEW good that hubby had several bowls!

8 cups water
½ cup celery, diced
½ cup carrots, diced
2 medium potatoes, diced
½ cup onion, diced
2 Tbsp Chicken style seasoning

Bring to boil, reduce heat & cook 10-15 mins until veggies are tender. Remove veggies from broth and add veggies to blender along with 1 cup soup water and blend.  

Add the following ingredients and blend until smooth

4 oz pimentos or fresh red pepper, chopped
1 tsp onion powder
¼ cup nutritional yeast flakes
1 block silken tofu
2 Tbsp cornstarch
2 Tbsp lemon juice
¼ cup oatmeal
1 tsp tarragon

To the remaining soup water, add 2 bunches Broccoli Floweret’s and the contents of the blender. Cook 3-5 mins.
