Vegan Banana Bread

Having tried countless vegan banana bread recipes, this is the BEST! Although it cannot compete with Barb's sour cream banana bread, I have no trouble eating this one as it has NO dairy!
It would work just as well using regular milk & sugars.

Banana Bread
¼ cup non-dairy milk
¼ tsp lemon juice
4-5 spotted bananas
½ cup dark brown sugar
½ cup raw sugar
1 tsp cinnamon
½ tsp nutmeg
2 cup whole-wheat flour
1 tsp baking soda
½ tsp baking powder
1 tsp vanilla
2 tblsp maple syrup
Optional: nuts
Preheat oven 350°, prepare 8” loaf pan (I used miniature pans the 1st time)
Whisk non-dairy milk and lemon juice until bubbly and set aside
Cream bananas and sugar until smooth and creamy, set aside
Whisk spices, flour, baking soda & powder together.
Add milk-lemon juice and banana mixture, as well as all remaining ingredients to the flour mixture. Stir until just combined.
Pour into loaf pan.
Bake 45 mins – 1 hour, or until toothpick comes out clean.
NOTE: trick is NOT to overmix!
