Oatmeal Raisin Cookies

(Aunt Rosie baked these and shared some with me.  They are my favorite vegan cookies to date!)

1 3/4 cup whole wheat pastry flour
1 1/2 teaspoon baking powder
3/4 teaspoon baking soda
1 cup + 2 Tablespoons brown sugar
1/2 cup vegan margarine, softened
1 Tablespoon vanilla
2 Tablespoons soy milk
1 Tablespoon flaxseed mill
1/5 cup oatmeal
1 cup raisins or cherries

Preheat oven to 350*.  Beat brown sugar, margarine, and vanilla until light and fluffy.  Add soy milk and flaxseed mill, beating until smooth.  Add oats and mix until incorporated.  Stir in raisins.  Scoop and drop onto greased sheets.  Press tops to flatten slightly.  Bake 11-15 minutes or until cookies have puffed and are soft to the touch.  Let cool completely before removing.
