How do you get the moisture out of tofu?

Wrap tofu in a linen towel and store it in the refrigerator.  Replace the linen if desired, although I never do.  I cut the tofu into slices, or how I want it, or slice afterwards - doesn't matter.  Just wrap it and set it in the refrigerator until ready to use.  I have also left it on the counter for a few hours.  This is the easiest method and works perfectly. 

To use tofu for scramble - FREEZE it!  I learned this by error.  When we rushed out of the house for an emergency a few years ago I opened my refrigerator and dropped everything into the freezer that would fit.  When we returned home, I tried it for scramble 'eggs' and was very pleased.  It crumbles perfectly!
