Chickpea Chicken Salad

Chickpea Chicken Salad

15 oz can chickpeas, drained and rinsed
1/2 cup celery, finely chopped
1/2 cup carrots, shredded
3 Tblsp lemon juice
2 Tblsp chives, finely chopped
1-2 Tbslp vegan Mayo
1 Tblsp nutritional yeast
1 Tblsp relish
2 tsp dry dill
chopped onion, optional

Mash chickpeas until coarse and no whole beans are left. Alternatively, pulse beans in a  food processor a few times, careful not to puree.
In a large bowl combine the mashed beans with all ingredients, stirring to combine.
TIP: Warming chickpeas makes mashing the beans much easier.
